You can only reload a previous save file, or start a new character and do the quests differently. You cant play afterwards because of the amount of political changes to the landscape in the mojave that can potentially happen after the main quest, and most of the side quests in game have relation to teh upcoming war between NCR and legion, and wouldnt make sense if that war had already happened (like for example the spy leak missions in camp golf wouldnt make sense and thus the quest wouldnt exist after the main quest). I think there are mods that can let you play after the main quest, but yet in the original game the main quest ends the game.
